A luxury cafe/restaurant is seeking an Executive Chef to develop a French gourmet menu. Emphasis will be placed on superior quality food and modern/trendy food presentation. Job Description • Leads, trains and manages kitchen personnel and supervises/coordinates all related culinary activities; • Directly supervises kitchen personnel with responsibility for schedules, hiring, discipline and performance reviews; • Provides direction for all day-to-day operations; • Estimates food consumption and requisition or purchase food; 
• Selects, develops and revises menu and recipes; 
• Standardizes production recipes to ensure consistent quality; 
• Establishes presentation technique and quality standards; 
 • Plans and prices menus; 
 • Ensures proper equipment operation/maintenance; 
• Ensure proper safety and sanitation in kitchen; 
 • May cook selected items or for select occasions
; • Offer culinary instruction and/or demonstrate culinary techniques; 
 • Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met; 
• Manages department controllable expenses including food cost, supplies, uniforms and equipment; • Participates in the budgeting process for areas of Maintains purchasing, receiving and food storage standards. • Prepares and cooks foods of all types, either on a regular basis or for special guests or functions;
